Pronto478 is the third chapter in a story that started with Shop225 and Il Caminetto, two of Melbourne's most awarded Italian restaurants. Founders Lorenzo Tron and Roberto Davoli built their name on one belief: great Italian food should welcome everyone. Pronto478 is that same belief, served faster

Meet Lorenzo Tron

Lorenzo Tron is the founder behind SHOP225, named Best Pizza in Australia, and the man on a mission to prove that no dietary requirement should ever come between you and a proper Italian meal. At Pronto478, he brings that same obsession to the street food of Rome and Sicily. Same standards, no white tablecloths.

Meet Roberto Davoli

Roberto was born in Reggio Emilia, the region of Italy famous for its handmade pasta. Tortellini were practically invented in his backyard, and he carries generations of pasta-making in his hands. At Pronto478, Roberto is across every part of the business, but his main focus is operations, which means he's the reason your order comes out fast and right.

One warning from the kitchen: Roberto does not joke around about his pasta. If a batch isn't pulled exactly right, his Italian comes back all of a sudden. The crew has learned to pull it right the first time.

Executive Chef and Partner

Antonino Galla

Born in Palermo, Sicily, Antonino has been the executive chef across the whole group for years, leading the kitchens at both Il Caminetto and Shop225 before bringing his craft to Bentleigh. He's the one making our sorrisi fresh every day, following the original recipe from Rome, and he personally coordinates our gluten-free, vegan, and halal-conscious cooking, so everyone eats well at 478.

Fun fact: In Palermo, arancini are called arancine. Ask him about it at your own risk. We're not opening that can of worms

Floor Manager and Partner

Andrea Santinelli

Rome-born Andrea has been running the floor at Il Caminetto since the day it opened, and before that he worked alongside George Calombaris. At Pronto478, Andrea leads the front-of-house team, builds the wine and cocktail lists, works with our suppliers, and hires the friendly faces you see at the counter. If your visit feels easy, that's Andrea's doing.



Fun fact: He's from Rome, but he doesn't support Roma. He's a Lazio man. We've decided to love him anyway.

Feeding everyone isn't a side project here. Antonino personally coordinates the inclusive side of the kitchen, using the same approach that made our sister venues loved by many people. OPENING DAY STORY

Day One at Pronto478

On July 18, we opened the doors and gave free food to our first 478 customers. Our very first customer was waiting outside for more than an hour before we opened. She's coeliac, and she couldn't wait to try Italian street food made properly for her. She's come back many times since, and we've even had the pleasure of meeting her mother.

That's the whole point of Pronto478. Everyone gets a seat, everyone gets a slice, and first customers become regulars.
